I was born and raised in the beautiful hills of Himachal Pradesh, where life moves at a gentler pace and food is more than just a meal—it is a way of bringing people together. Growing up amidst the mountains, forests, and villages, I developed a deep appreciation for nature, local traditions, and the authentic flavors of Himalayan cuisine.
What always made the food special in the Himalayas was not only the ingredients, but the way it was prepared. Meals were slow-cooked over wood fires, allowing every grain, spice, and ingredient to develop its full flavor. Fresh produce from the hills, pure spices, traditional Bilona ghee, and age-old cooking methods created food that was simple, wholesome, and unforgettable.
Over the years, while working across India's hospitality industry, I noticed that many of these authentic qualities were often missing in metropolitan dining. Food was becoming faster, but losing the patience, purity, and soul that make a meal truly memorable.
This realization inspired the birth of Himalayan Dum.
